 Medu Vada:



In this video, let’s see how to make crispy and tasty medu vada at home.Most of us struggle to get a perfect shape while making this vada. I have included tips and tricks to get a perfect shape, which I have learned from my mother. Friends, do give a try to this tasty recipe and share your valuable feedback.


Ingredients:

Urad dhal - 1 cup

Green chilly - 2

Ginger - 1 inch piece (Chopped)

Onion - 1

Curry leaves - few

Salt - as required

Hing - 1/4 tsp (a generous pinch)

Oil - for deep frying




Recipe:

  1. Wash the urad dhal well in water and soak for around 1-2 hours.
  2. Drain the water and add to a mixie jar.
  3. Add water little by little and grind it a fine paste.
  4. Transfer this to a bowl.
  5. Add finely chopped green chilly, ginger, onion and curry leaves.
  6. Add required salt and a generous pinch of hing.
  7. Mix everything well.
  8. Beat the batter well with a spoon, so that the air incorporates well in the batter. Beating the batter well gives tasty and crispy vada.
  9. Now heat oil in a pan.
  10. Use a banana leaf or any plastic cover.
  11. Wet you hand and the sheet.
  12. Take a small portion of the dough.
  13. Dip water in your fingers and make it round.
  14. Dip a finger in water and make a hole at the centre.
  15. Now carefully remove from the sheet and drop in hot oil.
  16. Turn sides and cook on both sides until golden brown.
  17. Tasty, crispy vada is ready. Serve it with coconut chutney, hot cup of tea/coffee and enjoy!



Notes:

  1. Even though the finger prints are there while dropping the vadas, it will become fine after some time.
  2. Make sure to beat the batter for crispy and tasty vada.
  3. If the batter becomes thin, you could adjust the consistency by adding rice flour or sooji.
  4. You can also add pepper corns and chopped coriander leaves to the batter.
