Carrot Halwa is one of the easiest Indian dessert which could be made with just 3 main ingredients which are commonly available at home. My kids love this and I often make this halwa as it is healthy too. With no further delay we will go to the recipe.

Ingredients:
- Grated Carrot - 2 cups
- Milk -1 cup
- Sugar - 1/4 cup
- Cardamom - 2
- Chopped cashew and almonds - 2 tbsp
- Ghee -1.5 tbsp
Recipe:
- In a kadai/pan heat 1 tbsp ghee.
- Add grated carrot to it.
- Saute for 5 minutes until it turns to a nice orange colour.
- Add 1 cup milk to it.
- Simmer and cook for 30 minutes or until the milk fully evaporates.
- Add sugar and cardamom to the mixture.
- The sugar completely melts and it starts leaving the sides.
- Switch off the flame and add chopped nuts fried in ghee .
Step by step recipe with pictures:
- Add 1 tbsp ghee in a kadai/pan.
- Add grated carrot and saute it for around 5 minutes.
- Add milk.
- Simmer it and cook for around 30 minutes or until the milk completely evaporates.
- Add sugar.
- Add cardamom and switch of the stove when the mixture becomes thickened and doesn't stick to the sides.
- In a small pan add 1/2 tbsp ghee.
- Add 2 tbsp chopped almonds and cashew.
- Roast the nuts in ghee and add it to the carrot halwa.
Notes:
- Raisins could be added ,but I generally prefer almonds and cashew in my carrot halwa.
- I always go for healthier option , but adding extra ghee enhances the taste. It is purely optional.
- The sweetness of this recipe is based on my taste level. You could add more sugar if you want.
