 Cardamom Tea Cake




In this post, let’s see how to make a very simple and an easy to make cake i.e. cardamom flavoured tea cake. This would be a perfect cake to have with a cup of tea or coffee. Friends, do give a try to this easy cake recipe and share your feedback.


Ingredients:

All purpose flour/Maida -  1 cup

Baking powder - 1 tsp

Salt - 1/4 tsp

Eggs - 3

Sugar - 3/4 cup

Vanilla essence - 1/2 tsp

Cardamom - 6

Oil - 1/2 cup

Milk - 1/2 cup

Lemon juice - 1/2 tsp




Recipe:

  1. Grease oil in the baking tray and line it with a parchment paper.
  2. Sift all purpose flour, baking powder, salt and keep it aside.
  3. In a mixie jar, add eggs, sugar, vanilla essence, cardamom and blend in mixie for 30 seconds until creamy.
  4. Add oil, milk, lemon juice and blend again for 10 seconds.
  5. Add this to sifted dry ingredients and mix well using a hand whisk.
  6. Finally add chopped cashews and raisins.
  7. Tap the tray twice and bake at 180 degree celsius for around 25-30 minutes.
  8. Check if the cake is baked by inserting a toothpick or knife. It should come out clean.
  9. Cool the cake completely and cut into pieces.
  10. Enjoy the cake with a hot cup of tea!


My notes:

  1. As it is a tea cake, it has mild sweetness, but if you want more sweetness, you can add 1/4 cup more sugar.
  2. Dust the raisins with little flour to avoid sinking.
