In this post, let’s see how to make poondu kuzhambu or garlic gravy. This is a very easy and simple gravy with no veggies, made with just shallots, tomato and garlic. Ingredients :

Oil - 3 to 4 tbsp

Mustard - 1/2 tsp

Fenugreek - 1/4 tsp

Curry leaves - few

Shallots - 10

Garlic - 10

Tomato - 1

Turmeric powder - 1/4 tsp

Chilly powder - 1 tsp

Coriander powder - 2 tsp

Salt - as required

Tamarind  juice - 3 tbsp (1 small size)

Jaggery powder - 1/2 tsp

Coriander leaves - few


Recipe:

  1. In a pan, add little oil (preferably gingelly oil).
  2. Add mustard. Let it splutter.
  3. Add fenugreek, curry leaves, finely chopped shallots and sliced garlic.
  4. Add little salt and saute until onions turn brown.
  5. Add finely chopped tomatoes and saute until mushy.
  6. Add turmeric powder, chilly powder, coriander powder and mix well.
  7. Add tamarind juice and little water to adjust the consistency of the gravy.
  8. Cover, simmer and cook until the oil separates.
  9. Finally add little jaggery powder to balance the taste.
  10. Garnish with coriander leaves and serve.
