Poondu kulambu
In this post, let’s see how to make poondu kuzhambu or garlic gravy. This is a very easy and simple gravy with no veggies, made with just shallots, tomato and garlic. Ingredients :
Oil - 3 to 4 tbsp
Mustard - 1/2 tsp
Fenugreek - 1/4 tsp
Curry leaves - few
Shallots - 10
Garlic - 10
Tomato - 1
Turmeric powder - 1/4 tsp
Chilly powder - 1 tsp
Coriander powder - 2 tsp
Salt - as required
Tamarind juice - 3 tbsp (1 small size)
Jaggery powder - 1/2 tsp
Coriander leaves - few
Recipe:
- In a pan, add little oil (preferably gingelly oil).
- Add mustard. Let it splutter.
- Add fenugreek, curry leaves, finely chopped shallots and sliced garlic.
- Add little salt and saute until onions turn brown.
- Add finely chopped tomatoes and saute until mushy.
- Add turmeric powder, chilly powder, coriander powder and mix well.
- Add tamarind juice and little water to adjust the consistency of the gravy.
- Cover, simmer and cook until the oil separates.
- Finally add little jaggery powder to balance the taste.
- Garnish with coriander leaves and serve.
