  • Urad dhal flour - 1 tbsp
  • Chana dhal - 1 tbsp
  • Red chilly powder - 1/2 tsp
  • Hing - 1/8 tsp
  • Salt - to taste
  • Curry leaves - few
  • Water - as required
  • Oil - for deep frying

Recipe:

  1. Soak chana dhal in water for minimum 1 hour.
  2. In a pan, roast rice flour for 2-3 minutes. No need to change colour.
  3. Transfer it to a bowl, add urad dhal flour, soaked chana dhal, red chilly powder, hing, required salt, curry leaves and 1 tbsp of oil.
  4. Mix everything well.
  5. Now add water little by little and knead it to a soft dough.
  6. Take a small gooseberry size ball and shape into round ball.
  7. Drizzle little oil on a plastic sheet.
  8. Place the dough, close with the sheet and press with any bowl.
  9. It should be even in thickness. If it’s not off even thickness, just gently press with the hand to make it as thin as possible without breaking. Use  a fork to make holes so that it doesn’t puff up while frying.
  10. Now fry these on hot oil at medium flame.
  11. Turn sides and fry on both sides.
  12. Crispy, tasty thattai is ready!

Notes:

You can also add crushed garlic to enhance the flavour.
