Thattai

- Ingredients:
- Rice flour - 1 cup
- Urad dhal flour - 1 tbsp
- Chana dhal - 1 tbsp
- Red chilly powder - 1/2 tsp
- Hing - 1/8 tsp
- Salt - to taste
- Curry leaves - few
- Water - as required
- Oil - for deep frying
Recipe:
- Soak chana dhal in water for minimum 1 hour.
- In a pan, roast rice flour for 2-3 minutes. No need to change colour.
- Transfer it to a bowl, add urad dhal flour, soaked chana dhal, red chilly powder, hing, required salt, curry leaves and 1 tbsp of oil.
- Mix everything well.
- Now add water little by little and knead it to a soft dough.
- Take a small gooseberry size ball and shape into round ball.
- Drizzle little oil on a plastic sheet.
- Place the dough, close with the sheet and press with any bowl.
- It should be even in thickness. If it’s not off even thickness, just gently press with the hand to make it as thin as possible without breaking. Use a fork to make holes so that it doesn’t puff up while frying.
- Now fry these on hot oil at medium flame.
- Turn sides and fry on both sides.
- Crispy, tasty thattai is ready!
Notes:
You can also add crushed garlic to enhance the flavour.
