Paneer Ghee Roast

Ingredients:
Fennel seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Black pepper - 1/2 tsp
Fenugreek - 1/4 tsp
Ghee - 2 tbsp
Paneer - 120 gm
Onion - 1 (small size)
Curry leaves - few
Ginger garlic paste - 1 tsp
Chilly powder - 1 tsp
Coriander powder - 1 tsp
Tamarind juice - 1 tbsp
Curd - 2 tbsp
Salt - as required
Jaggery - 1/2 tsp
Recipe:
- In a pan, add fennel seeds, cumin seeds, pepper corn, fenugreek and dry roast at low flame for around 3-5 minutes.
- Add it to a mixie jar and grind it to a fine powder. Keep it aside.
- Now in a pan, add ghee and fry paneer(cut into cubes) till golden brown. Turn sides in-between.
- Remove the paneer and keep it aside.
- In the same pan, add finely chopped onions, few curry leaves and saute until translucent.
- Add little salt while cooking onion to fasten the process.
- Add ginger garlic paste and saute until the raw smell leaves.
- Now add in chilly powder, coriander and the ground masala powders and saute for 1 minute at low flame.
- Add little tamarind juice and mix until it becomes dry.
- Finally add little curd and mix well at low flame until the ghee separates.
- At this stage, add the fried paneer and little jaggery powder to balance the taste.
- Tasty paneer ghee roast is ready ! Try this with rice, chapathi or parotta and enjoy.
