Raffaello Cake Recipe| Vanilla Cake with white chocolate ganache frosting

 Raffaello Cake







Raffaello Chocolates are chocolates with almond coated with milk chocolate covered with wafer and coconut. It tastes really tasty with milk chocolate and coconut . Here in  this video we have tried to bring in taste of raffaello chocolate in cake by layering the cake with white chocolate and coconut. Friends, do give try to this cake and share your feedback.


Ingredients:

Eggs - 3

Sugar - 3/4 cup

Vanilla essence - 1 tsp

Oil - 1/4 cup

All purpose flour - 1 1/2 cup

Baking powder - 1 tsp

Salt - 1/4 tsp

Milk - 1/4 cup

Desiccated coconut - 1/2 cup


For chocolate ganache:

Whit chocolate - 250 gm

Whip cream/Fresh cream - 120 ml






Recipe:

  1. In a bowl, add eggs, sugar, vanilla essence and beat well using an electric beater or hand whisk until frothy.
  2. Add in oil.
  3. Sift all purpose flour, baking powder and salt to it.
  4. Mix well at low speed until everything is well combined.
  5. Add milk to adjust the consistency.
  6. The cake batter is ready.
  7. Spread oil in the cake pan.
  8. Line with parchment sheet or dust it with flour.
  9. Pour in the cake batter and tap it twice for the air bubbles to escape.
  10. Preheat the oven and bake at 180 degree celsius for around 35- 40 minutes until a toothpick or a knife inserted come out clean.
  11. Let the cake cool down.
  12. Meanwhile let’s prepare the chocolate ganache.
  13. Boil little water in a bowl. Place another heat proof bowl over it.
  14. Add white chocolate and cream to it.
  15. Heat until the chocolate melts.
  16. Remove it from the stove and let it cool down.
  17. Now using a hand whisk or a electric beater, beat for around 15-20 seconds util it’s smooth enough in a spreadable consistency.


Assembling the cake:

  1. Cut the top uneven part of the cake in order to level it.
  2. Divide the cake into 2 layers. (if you want more layers, you can cut into 3 layers).
  3. Keep one piece of cake.
  4. Place parchment sheets around the cake to remove excess cream easily.
  5. Spread some sugar syrup above the cake.(For sugar syrup:Boil 1/2 cup water with 2 tbsp sugar until sugar melts)
  6. Place 1 or 2 tbsp of chocolate ganache and level it using a spoon or a spatula.
  7. Spread little desiccated coconut over the cream.
  8. Place another layer of cake and repeat the same.
  9. Spread the cream around the cake too.
  10. Try to spread it evenly, but no need to be perfect as we will cover it with desiccated coconut.
  11. Finally sprinkle desiccated coconut all over the cake and decorate with raffaello chocolate on top.
  12. Now let’s slice and enjoy the cake !


My notes:

  1. If you like nuts in your cake, you can add some chopped almonds while layering the cake along with desiccated coconut.
  2. White chocolate ganache tends to thicken after sometime, so try to spread it over the cake as soon as you beat it.
