Pineapple Kesari
In this video, we are going to see how to make pineapple kesari. Pineapple kesari is an indian dessert which is made of white rava/sooji and sugar. This dessert is called ‘kesari’ because of the saffron( kesar) used in this recipe which gives the colour to the dish. Though this is a very simple recipe, the proportion of each ingredient is very important in making kesari to get the right consistency. Ingredients:
White Rava/Sooji - 1 cup
Chopped pineapple - 1 cup
Salt - a pinch
Sugar - 1 cup + 1 tsp
Cardamom powder - 1/2 tsp
Saffron strands - 10-12
Water - 3 cups
Cashew nuts - 10-15
Rasins - 10-15
Ghee - 1/4 cup
Recipe:
- Add little ghee on a pan.
- Add cashew nuts and fry until golden brown.
- Once it is fried well, add raisins along with that and fry until it doubles in size.
- Once it is fried well, remove it to a plate.
- Add rava to the same pan, fry at medium flame for around 4-5 minutes until you get a nice aroma.
- Transfer it to a plate.
- Add chopped pineapple pieces, a pinch of salt and a tsp of sugar to the pan.
- Saute until soft.
- Now add in around 3 cups of water.
- Add few saffron strands and let it boil.
- Once the water starts boiling , add roasted rava and mix well without lumps at low flame.
- Let the rava gets cooked well.
- Finally add in sugar and cardamom powder.
- After adding sugar, it might have a tendency to form lumps, so stir continuously.
- Mix well until it thickens and finally garnish with roasted nuts and raisins.
- Tasty, pineapple flavoured kesari is ready to enjoy
