 KERALA STYLE BOLI RECIPE:



The Boli which we get in Kerala is generally many people’s favourite as it is very soft with mild sweetness. It is usually served along with payasam/kheer during weddings as well as in onam feast. Friends, do give a try and share your feedback.


Ingredients:

Chana dhal - 3/4 cup

Sugar - 3/4 cup

Cardamom powder - 1 tsp

Ghee - 1 tsp

Maida - 1 cup

Salt - 1/4 tsp

Turmeric powder - 1/4 tsp

Gingelly oil - 1/4 cup

Rice powder - 1/4 cup

Ghee for toasting 





Recipe:

  1. Wash chana dhal with water and add to a pressure cooker.
  2. Add 2-3 glasses of water and cook for 3 whistles.
  3. Once the pressure is released, check if the dhal is cooked well.
  4. Strain the water from dhal and grind to a fine paste.
  5. Add the ground paste to a pan.
  6. Add sugar and let it melt.
  7. Once the sugar is melted and when the dhal and sugar gets combined well, switch off the flame.
  8. Add cardamom powder for flavour.
  9. Let it cool down .
  10. Once it’s cooled down, shape into small round balls and keep it aside.
  11. Meanwhile in a separate bowl, add maida, salt and turmeric powder.
  12. Add water little by little and knead to a soft dough.
  13. Add gingerly oil and let it soak well for 1 hour.
  14. After 1 hour, take a small portion of the dough and try to spread it flat.
  15. Keep the dhal ball which we have made already.
  16. Close it with the maida covering and shape again to round shape.
  17. Now dust the ball well in rice flour and flatten it as thin as possible using a rolling pin.
  18. Toast these at low to medium flame by applying ghee on both sides.
  19. Tasty Boli is ready to enjoy.
  20. Serve these boli with payasam / kheer.
