KERALA STYLE BOLI RECIPE:
The Boli which we get in Kerala is generally many people’s favourite as it is very soft with mild sweetness. It is usually served along with payasam/kheer during weddings as well as in onam feast. Friends, do give a try and share your feedback.
Ingredients:
Chana dhal - 3/4 cup
Sugar - 3/4 cup
Cardamom powder - 1 tsp
Ghee - 1 tsp
Maida - 1 cup
Salt - 1/4 tsp
Turmeric powder - 1/4 tsp
Gingelly oil - 1/4 cup
Rice powder - 1/4 cup
Ghee for toasting
Recipe:
- Wash chana dhal with water and add to a pressure cooker.
- Add 2-3 glasses of water and cook for 3 whistles.
- Once the pressure is released, check if the dhal is cooked well.
- Strain the water from dhal and grind to a fine paste.
- Add the ground paste to a pan.
- Add sugar and let it melt.
- Once the sugar is melted and when the dhal and sugar gets combined well, switch off the flame.
- Add cardamom powder for flavour.
- Let it cool down .
- Once it’s cooled down, shape into small round balls and keep it aside.
- Meanwhile in a separate bowl, add maida, salt and turmeric powder.
- Add water little by little and knead to a soft dough.
- Add gingerly oil and let it soak well for 1 hour.
- After 1 hour, take a small portion of the dough and try to spread it flat.
- Keep the dhal ball which we have made already.
- Close it with the maida covering and shape again to round shape.
- Now dust the ball well in rice flour and flatten it as thin as possible using a rolling pin.
- Toast these at low to medium flame by applying ghee on both sides.
- Tasty Boli is ready to enjoy.
- Serve these boli with payasam / kheer.
