Mushroom Briyani
Mushroom briyani is one of our favourite food at our home, that we end up making this at least once in a week. As I am a biryani lover, I try exploring all type of biryanis. I always wish for beautiful textured rice with the right amount of spices. This is one main requirement for a biryani to taste perfect for me. This recipe is one such after attempting many trials, this has become my perfect biryani recipe.
This mushroom biryani is easily made as a one pot dish using an electric cooker and also requires only a limited amount of time. If you follow the steps correctly, you will get a flavourful, non sticky briyani.

Ingredients:
Basmati rice - 1 1/2 cup (300 gm)
Ghee - 3 tsp
Oil - 2 tbsp
Cinnamon - 1 small piece
Cloves - 2
Bay leaf - 1
Cardamom - 1
Fennel seeds - 1 tsp
Onion - 2
Ginger garlic paste - 1 tbsp
Tomatoes - 2
Mushroom - 350 gm
Turmeric powder - 1/4 tsp
Chilly powder - 1/2 tsp
Garam masala - 1/4 tsp
Salt - as required
Coriander leaves - handful (chopped)
Mint leaves - handful (chopped)
Recipe:
- Wash and soak basmati rice for around 30 minutes.
- After 30 minutes, drain the water and keep it aside.
- In a pan, add a tsp of ghee.
- Add the soaked rice and sauté well for 3-4 minutes.
- Now transfer it to the electric cooker.
- In the same pan, add 1 more tsp of ghee.
- Along with that, add around 2 tbsp of oil.
- Add in all spices and let it fry well in that oil and ghee.
- Now add in thinly sliced onions and sauté until brown.
- Once the colour of the onions turn brown, add ginger garlic paste.
- Sauté until the raw smell leaves.
- Now add in finely chopped tomatoes and sauté until mushy.
- Add in all masala powders (turmeric, chilly and garam masala) and sauté for 1 minutes.
- Now let’s add the chopped mushrooms, coriander leaves and mint leaves.
- Sauté well for 2 minutes.
- Now transfer this to the electric cooker.
- Add in around 2 1/4 cup of water ie. for 1 cup rice, we need to add 1.5 cup of water.Here we have taken 1.5 cup of rice, so we need to add 2.25 cup of water.
- Add in required salt and add in around 1 tsp of ghee for flavour at the end.
- Cover and switch on the electric cooker.
- Once the electric cooker is switched off, flavourful mushroom biryani is ready to be served.
- Serve it with raita, papad and enjoy!
