Easy Blueberry Cheesecake Recipe | How to make cheesecake with blueberry topping

 Blueberry cheesecake 



In this post, let’s see how to make cheesecake with blueberry topping. This cake is very simple to make and taste absolutely delicious. Friends, do give a try to this recipe and share your feedback.


Ingredients:

Biscuit - 10 (50 gm)

Butter - 25 gm

Cream cheese - 300 gm

Powdered sugar - 1 cup ( 100gm)

Corn flour - 1 tbsp

Whip cream - 1/4 cup ( 60 ml)

Egg - 1

Vanilla essence - 1 tsp


For sauce :

Blueberry - 100 gm

Sugar - 3 tbsp

Water - 3 tbsp 




Recipe :

  1. Crush the biscuit using hand or in mixer to fine powder.
  2. Mix melted butter to the powdered biscuit.
  3. Spread some butter in a 16 cm cake pan.
  4. Pour the biscuit mixture into the cake pan.
  5. Level it evenly with a spoon.
  6. Now bake this at 180 degrees Celsius for 10 minutes.
  7. Meanwhile let’s prepare the cheese cake batter.
  8. In a bowl, add cream cheese and powdered sugar.
  9. Beat well using an electric beater or a hand whisk.
  10. Now add in a tbsp of corn flour, whip cream and mix well using the beater.
  11. Finally add in a egg and a tsp of vanilla essence and beat well till everything is well combined.
  12. Pour this cheese cake mixture to the cake pan.
  13. Wrap the cake pan with an aluminium foil.
  14. Place the cake pan in a baking tray.
  15. Add little water around the cake pan in the baking tray.
  16. Now bake this at 180 degrees Celsius for 55-60 minutes.
  17. Once it’s baked well, the sides starts separating from the cake pan and it will not jiggle ,looks little firm. By using these tips , you can make sure it’s baked well.
  18. Once it’s cooled down, take it out of the cake pan.
  19. Let it cool completely.
  20. Now let’s start preparing the blueberry sauce.
  21. In a bowl, add blueberry, sugar and little water.
  22. Boil this for around 5 minutes until thickens.
  23. Remove it from the stove and cool it down.
  24. Spread the sauce over the cheese cake.
  25. Slice and enjoy the yummy cheesecake with blueberry topping!



Notes:

If you want the cheesecake with mild sweetness, you can reduce the amount of sugar to 3/4 the cup instead of 1 cup.
