Restaurant style vegetable kurma recipe

 Vegetable kurma 




This vegetable kurma gives the restaurant style taste and it goes well with chapathi, appam, idiyappam. In this recipe, we cook all the vegetables in flavourful spices along with coconut paste. This is an easy one pot recipe. Friends, do give a try to this recipe and share your feedback.


Ingredients :

Grated coconut - 1/2 cup

Cashews - 6

Fennel seeds - 1/4 tsp

Poppy seeds - 1/4 tsp

Oil - 2 tbsp

Bay leaf - 1

Cardamom - 2

Cloves - 2

Cinnamon - small piece 

Cumin seeds - 1/4 tsp 

Green chilly - 1

Curry leaves - few

Onion - 1

Ginger garlic paste - 1 tsp

Tomato - 1

Mint leaves - few

Beans - 6 

Carrot - 1

Potato - 1

Green peas - 1/4 cup

Turmeric powder - 1/4 tsp

Chilly powder - 1 tsp

Coriander powder - 1/2 tsp

Garam masala - 1/4 tsp

Salt - as required 

Coriander leaves - few 


Recipe :

  1. Grind coconut along with few cashews, fennel seeds, poppy seeds to a fine paste. Keep this aside.
  2. In a cooker, add little oil.
  3. Once the oil becomes hot, add bay leaf, cardamom, cloves, a piece of cinnamon and cumin seeds. 
  4. After these spices get fried in oil, add slit green chilly and few curry leaves.
  5. Now add finely chopped onions and saute well until translucent.
  6. Add a tsp of ginger garlic paste and saute until the raw smell leaves .
  7. Now add 1 chopped tomato and saute until it turns  mushy.
  8. Add few mint leaves at this stage along with all the vegetables ( beans, carrot, potato, green peas).
  9. Now add all the masala powders( turmeric powder, chilly powder, coriander powder, garam masala).
  10. Saute this for 1 minute .
  11. Now add in the ground coconut paste .
  12. Add salt and little water to adjust the consistency.
  13. Cover and pressure cook for 1 whistle.
  14. Once the pressure is released from the cooker , garnish with few chopped coriander leaves .
  15. That’s it! Our one pot restaurant style vegetable kurma is ready ! This goes well with chapathi , appam, idiyappam.
