 Palkova 



Palkova is a very easy to make dessert with just 2 main ingredients which is usually available at home. It is made by cooking milk in a wide vessel . When milk reduces well , add sugar and cardamom powder and that’s all, out delicious palkova is ready . It requires only little patience as the time required for milk to reduce is usually one hour , but trust me , it is always worth a try. Friends, do give a try and share your valuable feedback.




Ingredients:

Milk - 1 litre (4 cups)

Sugar - 1/4 cup

Cardamom powder - a pinch 

Ghee - 2 tsp


Recipe :

  1. Take a wide vessel.
  2. Add milk and boil at medium flame.
  3. Stir occasionally.
  4. Milk reduces to half after 30 minutes.
  5. Milk looks creamy after 45 minutes.
  6. Milk thickens fully after 1 hour.
  7. Add sugar and a pinch of cardamom powder.
  8. After adding sugar, it loosens up little.
  9. Mix until it becomes dry. It takes about 5 minutes.
  10. Finally add little ghee, so that it will be easy to scrape the sides. It is an optional step.
  11. Yummy palkova is ready to enjoy ! 




My notes :

  1. Make sure to add a pinch of cardamom powder, so that it doesn’t dominate the flavour of palkova.
  2. Try to use a wide pan. It will help to evaporate the milk quickly and reduce our cooking time.
  3. In this recipe , 1/4 cup sugar was just enough for me . If you want more sweetness , you can add 1 or 2 tbsp of sugar extra.
  4. Cooking in nonstick vessel is easier as it doesn’t stick to the bottom easily. But it is more tastier if we boil milk  in a normal vessel. The reason is we need to stir quite often in a normal vessel  and scraping the milk solids from bottom gives more taste.
