Carrot Kheer is a delicious  Indian dessert which is made using the  healthy ingredient carrot. This is a very simple recipe. Here we cook  the carrots in milk on low flame and garnish with some chopped nuts. For sweetness, we have added condensed milk in this recipe , which also enhances the taste of the  kheer ..Please do give a try to this recipe and share your valuable feedback.





Serves - 4-5 people


Ingredients:

Carrot - 250 gm

Milk - 500 ml

Condensed milk - 3/4 cup

Cardamom powder - 1/4 tsp

Chopped Cashews - 2 tbsp

Chopped Almonds - 2 tbsp

Chopped Pista - 2 tbsp


Recipe:

  1. Grind the carrots in a mixer to a fine paste by adding 1 or 2 tbsp of water.
  2. In a pan , add little ghee and saute the carrot puree for 4-5 minutes until the raw smell leaves. 
  3. Add milk and let the carrots get cooked in this.
  4. Stir occasionally until the milk reduces to half.
  5. Once the carrot puree is well cooked in the milk and thickened, add a pinch of cardamom powder.
  6. Add around 3/4 cup of condensed milk and some chopped nuts.
  7. Simmer and cook for 5 minutes.
  8. Delicious carrot kheer is ready to enjoy! It can be served hot as well as chilled.
