VANILLA CUPCAKES
Vanilla cup cakes are the mini version of vanilla cakes. It is soft in texture and rich in taste. The richness of the cakes are due to the butter and eggs added in this recipe. The softness depends on how well we beat the butter and sugar. It should be light and airy so that the cakes are as soft as we expect. Please do give a try and let us know how it turns.
Baking time : 17- 20 minutes
Yields : 12 Muffins
Ingredients :
Sugar - 1 cup(200 gm)
Butter - 200 gm
Egg - 3
Vanilla essence - 2 tsp
All purpose flour - 1 1/2 cup(200 gm)
Baking powder - 3/4 tsp
Salt - 1/4 tsp
Milk - 1/4 cup
Recipe:
- In a bowl, add butter and sugar . Beat well using an electric beater until light for around 5-7 minutes.
- At this stage, the butter colour changes from yellow to white and the texture of the butter will be very light.
- Now add eggs, one by one and beat well. If you add all the eggs together, there are chances that it might curdle.
- Once the eggs are beaten well, add vanilla essence and mix well.
- In a separate plate, sift all the dry ingredients.
- Now add dry ingredients to the wet and beat at low speed until everything is well combined.
- The batter will be thick at this stage. So add little milk to adjust the consistency.
- Line the muffin tray with paper cups or butter and dust it with all purpose flour.
- Scoop the batter till 3/4th level of the cups.
- Preheat the oven at 180 degrees celsius and bake the cupcakes for 17-20 minutes.
- Check if the cupcakes are done by inserting a toothpick or knife. It should come out clean.
- Delicious soft cupcakes are ready to enjoy!
