Kerela Style Vegetable Stew Recipe

VEGETABLE STEW


This vegetable stew is  very popular and a common side dish in kerela for breakfast like appam , idiyappam. The taste of this gravy is due to vegetables getting cooked in coconut milk . The consistency of this gravy is little runny. This is an easy as well as healthy gravy  . Friends, do try this at home and share your comments .




INGREDIENTS :

GRATED COCONUT - 1 CUP
WATER - 1.75 CUP (APPROXIMATELY)
COCONUT OIL - 1-2 TBSP
CINNAMON - 1/2 INCH PIECE
CARDAMOM - 2
CLOVES - 2
GREEN CHILLY - 1 
CHOPPED GINGER - 1 TBSP
CURRY LEAVES - FEW
ONION - 1 (THINELY SLICED)
POTATO - 1
BEANS - 6
CARROT - 1
FROZEN GREEN PEAS - 1/4 CUP
SALT - AS REQUIRED
PEPPER POWDER - 1/4 TSP

RECIPE:

  1. ADD GRATED COCONUT AND WATER IN A MIXER JAR. GRIND IT WELL. 
  2. FILTER THE COCONUT PASTE .
  3. SQUEEZE AND EXTRACT COCONUT MILK OUT OF IT. THICK COCONUT MILK IS READY.
  4. NOW ADD LITTLE WATER TO THE GROUND COCONUT PASTE. GRIND IT AGAIN AND EXTRACT THE THIN COCONUT MILK IN THE SAME WAY.
  5. KEEP THIS ASIDE.
  6. IN A PAN, ADD LITTLE COCONUT OIL. 
  7. ADD A PIECE OF CINNAMON, CLOVES AND CARDAMOM. LET IT FRY.
  8. ADD SLIT GREEN CHILLY, CHOPPED GINGER PIECES AND FEW CURRY LEAVES. FRY IT WELL.
  9. NOW ADD THINEY SLICED ONION AND SAUTE UNTIL TRANSLUCENT. ADD LITTLE SALT WHILE FRYING ONION AS IT WOULD FASTEN THE COOKING PROCESS.
  10. NOW ADD ALL THE VEGETABLES. ADD REQUIRED SALT  AND THIN COCONUT MILK. COVER AND COOK UNTIL THE VEGETABLES ARE WELL COOKED.
  11. FINALLY ADD THICK COCONUT MILK AND LITTLE PEPPER POWDER.
  12. SIMMER AND COOK FOR JUST 1-2 MINUTES. 
  13. EASY AND TASTY KERELA STYLE VEGETABLE STEW IS READY. IT CAN BE SERVED ALONG WITH IDIYAPPAM, APPAM.
