SAMBAR RECIPE| SOUTH INDIAN STYLE SAMBAR RECIPE

Sambar is a quiet common dish in a every south Indian's home. It is made by cooking vegetables in tamarind juice and sambar powder , finally adding cooked dhal to it. Even-though it seems to be very simple recipe, it took me some time to make it as perfect as my grandma makes. Each person has a different style of making. Some used to cook everything in cooker, but my way of making is different. I used to cook vegetables in a vessel with tamarind juice and sambar powder like old style cooking , so that all the essence of tamarind juice and sambar powder gets absorbed by the vegetables well and tastes really tasty. We make sambar little watery, but it's upto one's taste, they could make it thin or thick. Without any further delay , let's check the recipe.


              

Ingredients:

Toor dhal - 1/2 cup Turmeric powder - 1/4 tsp Asafoetida - 1/4 tsp Oil - 1 tbsp Onion - 1 Tomato - 1 Vegetables(Drumstick - 1, potato - 1, brinjal - 1, carrot - 1, zucchini - 1) Sambar powder - 2-3 tsp Tamarind pulp ( lemon size) Salt Coriander leaves Jaggery - small piece (optional)

For tempering :

Oil - 1 tbsp Mustard - 1/4 tsp Fenugreek seeds - 1/4 tsp Red chilly - 1 Curry leaves

Recipe :

1. Add toor dhal, turmeric powder , asafoetida in a pressure cooker. 2. Add 1 cup of water and cook it for 4-5 whistles. 3. Mash it well with a spoon . 4. In a vessel , add little oil . 5. Add onion and saute for 1 minute. 6. Add tomato along with other vegetables. 7. Add sambar powder, tamarind pulp and salt . 8. Cover and cook until the vegetables are soft enough . 9. Add cooked toor dhal to it . 10. Add required salt and simmer it for 5 minutes. 11. Finally add coriander leaves and a small piece of jaggery . 12. Hot sambar is ready to be served along with rice !

Notes:
1.Vegetables can be varied as per one's wish.
2. Adding jaggery is purely optional, but it enhances and balances the taste of spicy and tangy.
