Pineapple kheer is a very easy, simple to make dessert if you have few ingredients in hand. I didn't even know we could make kheer using pineapple before tasting it. Once our family friend made this when she came to meet us. It was tasting so good, so immediately asked her recipe and tried it at home. So lets go to recipe.
Ingredients:
Milk - 1 cup
Ghee - 1 tbsp
Condensed milk - 1/4 cup
Cashews - 6
Raisins - 6
Cardamom powder - 1/4 tsp
Chopped pineapple pieces - 1 cup
Sugar - 1 tsp
Recipe :
1. Boil milk until it reduces to half.
2. Add condensed milk and mix well .
3. Simmer it for 2 minutes.
4. Cool it down .
5. In a pan , add a tbsp of ghee.
6. Fry cashews, raisins and keep it aside .
7. In the same pan , add finely chopped pineapple pieces with a tsp of sugar and cook until soft .
8. Add cardamom powder at the end .
9. Add this to cooled reduced milk .
10. Add roasted cashews and raisins to it .
11. Refrigerate for an hour and serve it .
12. Chill pineapple kheer is ready to serve !
Notes :
1. Add cooked pineapple pieces only when the milk is cold . If you add to hot milk , there are chances for the milk to curdle due to acidic nature of pineapple.
2. If you want little more thicker consistency , you could cook sago separately and add it to milk .
