EGG KOTHU PAROTTA


Kothu parotta is a very famous street style food in South India. I have grown up tasting this since my childhood. In restaurants, they always use any leftover gravy to give an additional taste. But when we cook in home, sometimes we will not be having any gravy handy. In that cases, this recipe is like a saviour recipe. This can be made under 15 minutes and without any salna or leftover gravy. Give a try and let me know how it turns. With no further delay, let's go into the recipe.

Serves - 2

INGREDIENTS:

  • Oil - 2 tbsp
  • Green chilly - 2
  • Onion - 3
  • Ginger garlic paste - 1 tbsp
  • Turmeric powder - 1/4 tsp
  • Chilly powder - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Cumin powder - 1/4 tsp
  • Garam masala - 1/4 tsp
  • Egg - 2
  • Pepper powder - 1/4 tsp
  • Curry leaves
  • Parotta - 3
  • Tomato - 1
  • Coriander leaves 
  • Salt


Recipe:

  1. In a pan, add oil and green chilly.
  2. Add chopped onion and fry until translucent.
  3. Then add ginger garlic paste and saute until raw smell leaves.
  4. Add turmeric powder, chilly powder, coriander powder, cumin powder and garam masala powder.
  5. Saute well until the masala smell leaves.
  6. Make a well in the center and add eggs.
  7. Scramble it well and then mix well with all masala.
  8. Add pepper powder, curry leaves and required salt .
  9. Meanwhile pulse the cooked parottas in a mixer to fine pieces.Do not grind it.
  10. Add shredded parotta pieces and mix well.
  11. Finally add chopped tomato( without seeds ), coriander leaves and saute well in high flame for 5 minutes.
  12. Hot egg kothu parotta is ready to serve .
