Vegetable Pulav recipe

Vegetable pulav is an easy to make rice recipe in India. Cooking rice in flavorful spices and tossing it with vegetables is the basic step in making this pulav. This vegetable pulav goes well with paneer butter masala. 
I had tried before in pressure cooker, but the texture of rice was not that good as I expected. Then on I started cooking rice seperately in vessel. This is an easy to go recipe for potluck and party.Now let's go to the recipe.


Ingredients:

  • Basmati rice - 1 cup
  • Cinnamon - 1 small piece ( 1 inch )
  • Bay leaf - 1
  • Star anise - 1
  • Cardamom - 2
  • Cloves - 2
  • Salt 
  • Ghee - 2 tsp
  • Paneer cubes - 1/2 cup
  • Oil - 1 tbsp 
  • Green chilly - 1 
  • Onion - 1
  • Ginger garlic paste - 1 tsp
  • Chopped  beans - 1/2 cup
  • Chopped carrot - 1/2 cup
  • Green peas - 1/4 cup
  • Cashews - 10


Recipe :

1. Wash the rice  well  to remove excess starch and soak it for 30 minutes.

2. In boiling water , add cinnamon, bay leaf , star anise , cardamom , cloves and let it boil .
3. Add soaked rice and cook until it is 90 percent cooked   .
4. Strain the rice and keep it aside .
5. In a pan , add little ghee. Add  saute the paneer cubes until golden brown and keep it aside .
6. In the same pan , add little oil .
7. Add green chilly , sliced onion ad saute until onions turn translucent.
8. Add ginger garlic paste and saute until the raw smell leaves .
9. Add chopped beans , carrot and green peas .
10. Add salt and saute until the vegetables are cooked.
11. Add cooked rice, fried paneer cubes and mix well .
12. Garnish with chopped coriander leaves and fried cashews in ghee .
13. Tasty vegetable pulav is ready to be served .
