Kaju Katli is one of the popular Indian sweet. I never knew that this is a very easy to make sweet until i tried for the first time. This recipe is very simple and can be prepared in ten minutes. I had made it so many times and not even once it has been a failure.

Ingredients:
- Cashew - 1 cup
- Sugar -1/2 cup
- Water -1/4 cup
Recipe:
- Powder the cashews by using the pulse button in mixie.
- In a pan , add water and sugar.
- Bring it to boil.
- After few minutes , check the consistency of the syrup by dropping a drop of syrup in a bowl of water.It should not dissolve, you could see a fine thread . This is the right consistency.
- Now add the powdered cashew into the syrup and keep it in medium to low flame.
- After some time, the mixture gets thickened and starts leaving the sides. Check if the mixture is done by rolling a small mixture into ball.
- Now switch off the flame and cool down for 5 minutes
- When its warm, knead the mixture well by adding 1 tsp ghee.
- Place it in a butter sheet. Roll it with a wooden roller and cut into diamond shapes.
